When spring arrives and the temperatures are milder, opt for a light and fresh recipe with small cucumber maki. They contain in their heart a sweet mixture of Pink Lady® apples and marinated salmon, the ideal recipe to wow your guests!

Ingredients for 4 persons
- 1 Pink Lady® apple
- 1 cucumber
- 1 salmon steak
- 2 tbsp. salmon roe
- The juice of 2 yellow lemons
- 2 tbsp. tablespoon cider vinegar
- 2 tbsp. powdered sugar
- A few sprigs of dill
- Salt, freshly ground pepper

Pink Lady Makis®, cucumber and marinated salmon
Pour the juice of a lemon, apple cider vinegar and sugar into a container, then mix until the sugar dissolves.
Then cut the salmon into small cubes of identical size and place in the preparation. Film everything then place 30 minutes in the refrigerator.
Peel the cucumber and then make nice strips using a peeler or a thin knife. Place these strips on absorbent paper sheets and leave them aside for about twenty minutes.
Peel the Pink Lady®, remove the core then cut very small dice. Then sprinkle them with lemon juice. Mix the diced salmon and the diced Pink Lady® together.
Very delicately, make small rolls with the cucumber strips. Place them on the serving dish and stuff them with the Pink Lady® / salmon mixture. Add a turn of the pepper mill, a few salmon eggs and finish with 1 small sprig of dill. Serve immediately!
